I’m back with another fun Nespresso recipe – I discovered the best vegan bulletproof coffee recipe using homemade hemp milk and coconut oil! It’s a serious addiction you guys. It’s really so, so good and very filling. Did you know that bulletproof coffee was supposed to replace breakfast? That’s what I’ve heard, and let me tell you, this stuff satisfies. It’s become a necessary part of my daily morning routine. And it’s super easy to make thanks to my Nespresso VertuoPlus and Aeroccino. I mean it. Super. Easy.

Vegan Eggnog Latte and a Giveaway with Nespresso

It’s that time of year folks! The holiday beverages are out in full effect. I’m usually a diehard for pumpkin spiced lattes, but no more!  I’ve been trying to mix it up and try something new. One of my favorites this year is the Starbucks Eggnog Latte. Holla.

Now I’ve never been a big fan of eggnog, well, because of the egg part 😉 So I’ve always been a taster and not a enjoyer of eggnog. I love the amazing spices used, but didn’t want to have to deal with the drinking of eggs part. Sooo I decided that I’d make my own vegan eggnog and enjoy myself some tasty eggnog lattes. Yay.

First step, make the vegan eggnog….

INGREDIENTS

  • 1 cup raw unsalted cashews, soaked and drained 
  • 2 cups water 
  • 1 14-ounce full-fat canned coconut milk 
  • 1 tablespoon pure maple syrup
  • 1 teaspoon vanilla extract 
  • 1 teaspoon nutmeg 
  • pinch of cinnamon
  • pinch of cloves
  • pinch of kosher salt

INSTRUCTIONS

  1. Soak cashews in water overnight. 
  2. Drain them and throw then into a blender with 2 cups of water. 
  3. Blend until super smooth.
  4. Add the rest of the ingredients and blend.

Once you have your eggnog, it’s time to make the espresso! I partnered with Nespresso on this post because my love for Nespresso is endless. I used the latest Nespresso Evoluo. Life pre-Nespresso was hard. so hard. Thankfully I have the Evoluo now, to keep me company. Its super tasty espresso is ready in less than a minute AND my handy Aeroccino whips up my eggnog at the same time. I can’t tell you how handy this is when I’m rushing out the door to get the kids to school. No time for breakie, but there’s always time for a latte!

And since it’s the holidays, Nespresso currently has one of it’s fun limited edition flavors available, Swiss Chocolate. ZOMG this stuff is good guys. It’s even better with my vegan eggnog though! 😉 It’s like all happy flavors combined into one mug. Pretty freaking fabulous.

Nespresso Caramelizio and a Giveaway

You all know how much I love my Nespresso 🙂 I wanted to share with you the new morning coffee addiction. It’s seriously so yum. I combined one of my favorite warm beverages, nicknamed the “Hippie Drink” with Nespresso’s newest VertuoLine Grand Cru brew the Caramelizio.






I originally found the Hippie Drink recipe on Door Sixteen, but it looks like the originator was artist Jen Ray. Now don’t be scared, but the Hippie Drink contains Tumeric and Tahini…doesn’t sounds like a sweet drink recipe does it? Just believe though, it tastes amazing. Especially with the caramelized sugar and vanilla notes in Nespresso’s Carmelizio.

ingredients

1 carmelizio capsule
1 cup almond milk
1 tsp tahini
1 tsp maple syrup
a pinch of turmeric
a pinch of nutmeg
a pinch of cinnamon

directions

Brew your carmelizio into a medium sized mug.
In a small pot, heat the almond milk on medium without letting it get to a boil. 
Add your tahini, making sure to whisk out any lumps.
Whisk in the maple syrup and spices
Heat until desired temperature.
Add to the mug with your carmelizio coffee and enjoy!
If you want to be fancy sprinkle a dash of cinnamon on top 😉
I’ve been enjoying this drink so much lately. I’m going to have to try it iced when the weather starts getting too hot 🙂

Festive Finds with Nespresso and Sur La Table

I’m not sure you all have noticed, but the blog has been taking a backseat to life lately. Same with my Instagram account. Although just recently I’ve been refocusing on my site with some bigger and better ideas. I’m hoping to get some new things up and running by the new year!

In the meantime I figured I’d resurrect some old favorites. The Saturday Shopping post is one! #FiveforFifty will be back and better than ever too, with a slight twist. I’ll talk more about that one later though…

So back to the Saturday Shopping feature! Today’s post is a combination of Saturday Shopping and an awesome giveaway and the theme? Festive Finds! We’ve been prepping the house for a bunch of upcoming events, the first up is Friendsgiving. We love having friends over for some turkey and all of the fixings. It’s a great way to catch up with everyone before the crazy part of the holidays begin 😉

 When I was setting up my fall table-scape, I realized we were missing some holiday hosting essentials. So last week the Mr and I stocked up on bunch of entertaining goodies at Sur La Table. Oh and did I mention? We hit up the Nespresso boutique first. Our Nespresso supply was pretty much non-existent, with only a couple of Decaffeinato capsules left. Therefore we were nice and energized when we finally arrived at Sur La Table 😉

Nespresso really has me addicted. I adore a good frothy latte in the morning. And I’m pretty picky when it comes to my coffee beverage. Nespresso has done me good on that front. I reached out to them a year or so ago and was able to check out their UMilk which I love and then again when they first released their VertuoLine. The VertuoLine does both coffee and espresso – something for everyone right? Now back to my Sur La Table trip – I just might have gone a little overboard. Can I blame it on too much caffeine? Coconut Vanilla Cream Iced Coffee

Hello Summer! It’s officially hot season here in the Silicon Valley. And as you know I love my morning Nespresso ritual. BUT now that it’s hot out, my morning espresso was a little too toasty for my liking. I love my iced coffee in the summer, so I figured I’d play around with a couple of iced coffee ideas and I came up with something SO tasty you guys. Seriously, I love it. I’m calling it the Coconut Vanilla Cream Iced Coffee. And yes, it turns out it’s vegan – even better!

When making an iced coffee or mixed coffee drink, I always think it’s a little better to use coffee rather than its smaller counterpart, a shot of espresso. Lucky for me, Nespresso has just come out with their new Nespresso VertuoLine system, which they so generously gifted me. This gorgeous thing makes espresso AND coffee. How perfect is this for households where some love their coffee and another espresso? As for my household, I thought it was perfect to be able to enjoy both. I don’t discriminate 😉

For this recipe, we’re going with coffee. More specifically? The Vanizio (aka vanilla) coffee pod. And for the coconut vanilla cream? I used agave nectar, coconut milk, a dash of vanilla extract and a slightly smaller dash of almond extract. You can get the full recipe below.

Ingredients
– ice
– 1/2 cup agave nectar
– two cans of coconut milk (full fat)
– 1 nespresso vanizio coffee pod
– 1/2 cup of almond milk
– dash of almond extract
– dash of vanilla extract

Directions
1. Combine the coconut milk and agave nectar in medium sized pot and stir periodically on medium low heat until reduced about halfway. It took about and hour to an hour and a half. Remember don’t let it burn!

2. Once it cools you can store it in a large jar in the fridge for a few weeks.

3. Brew your coffee and add it to a shaker with a few ice cubes. I brewed my Nespresso coffee directly into my shaker (see pic below).

4. Add the dash of almond and vanilla extract to the shaker and shake to mix.

5. In large glass add 3 or 4 ice cubes and about 3 tablespoons of the coconut cream. You can adjust the amount of coconut cream to your sweetness preference.

6. Pour the coffee mixture into the glass.

7. Add about a half a cup of almond milk or other milk of your choice.

8. Stir and enjoy!

Nespresso To The Rescue

I’m a big fan of my lattes and during the holiday season, Starbucks pumpkin lattes are a special treat! Peet’s maple lattes are a close second, have you tried them? Yum. I would love to buy my $5 lattes (decaf, soy, grande pumpkin lattes with only 2 pumps) everyday, but that’s a lot of $$$ a month. In an effort to upgrade our home brew, we traded in the Keurig for this Cuisinart espresso maker. Well, we traded it in after it died after only a year and a half. Always fun when something dies right after the warranty ends, right?

Oh the mess, especially with TILED (not solid surface) countertops. *Sigh*

As for the Cuisinart Espresso machine? Gah, what a monster this thing is. Not only did I miss the convenience of single serve, since the Mr needs his caffeine and I’m all about my decaf right now, but our espresso machine is large, messy and a big pain in the butt. Not long after we got it, every time I used the steamer wand for frothy milk it would dump watery milk all over the counter for 10 minutes afterwards. Now it leaks water and coffee on our counter as well. Not only do we have this mondo machine on our counter, but we also have a coffee bean grinder as well. And let me say it’s really annoying to have to empty out the Mr’s coffee beans for my decaf beans to get fresh grinds. I seriously debated getting a SECOND bean grinder just for my decaf beans 😉 Needless to say I’m over it. Way over it.

I’ve been lusting after a Nespresso for a long, long time. Guess what? Nespresso was listening! They sent me the brand new UMilk model and what a beaut it is. It’s so petite and pretty on my counter. Ah, I love it so. The sleek design is adorable and is such a contrast to all of the bulk that was there before. After I first set it up, the Mr commented on how empty the counter was. I responded by saying “Isn’t that a good thing?!”.

I love that this little machine makes such a difference in my morning routine. I love the cute little colored espresso capsules and the super easy, touch-of-a-button milk frother. How did it take me this long to get here, Nespresso? Thank you for coming into my life, especially with a newborn (and sleepless nights) right around the corner. Might have to make that switch from decaf to regular espresso sooner than expected 😉
